Ingredients
  

  • 8 oz cream cheese softened
  • 1 cup dill pickles finely chopped (about 6-7 medium pickles)
  • 1 cup panko breadcrumbs
  • ½ cup sour cream
  • 2 tsp pickle juice

Instructions
 

  • Finely chop your dill pickles until they're about the size of small peas. Pat them dry with paper towels to remove excess moisture.
  • Heat a non-stick skillet over medium heat (no oil needed). Add your panko breadcrumbs and toast for 3-5 minutes, stirring frequently until they turn golden brown. Remove from heat immediately.
  • In a medium mixing bowl, combine softened cream cheese and sour cream until completely smooth. Mix in the pickle juice to add that distinctive tangy flavor throughout.
  • Gently fold in the chopped pickles and ¾ of your toasted breadcrumbs, reserving the rest for topping. Mix until just combined.
  • Transfer the mixture to a serving bowl and sprinkle the remaining toasted breadcrumbs on top. For an extra touch of visual appeal, add a few pickle slices and a sprinkle of fresh dill.

Notes

Allowing the dip to chill for 30 minutes before serving intensifies the flavors, though it's perfectly acceptable to serve immediately.
For a lighter version with 30% fewer calories, use Neufchâtel cheese instead of full-fat cream cheese and fat-free Greek yogurt in place of sour cream.
For a gluten-free version, use crushed pork rinds instead of panko breadcrumbs.
Plant-based cream cheese works beautifully for a dairy-free adaptation.
