Instructions
 

  • Core and dice your apple into small, even pieces (approximately 1/2-inch cubes). Leave the skin on for added fiber or peel if preferred. Place the diced apple in a microwave-safe mug or small bowl.
  • In a small bowl, mix the brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until well combined. Pour this mixture over your diced apple and stir to coat every piece evenly.
  • In another bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Add the cold butter and use your fingertips to work it into the dry ingredients until the mixture resembles coarse crumbs. Fold in the chopped nuts if using.
  • Sprinkle the crisp topping evenly over the seasoned apples. Gently press down slightly without compacting too much. Microwave on high for 1.5-2 minutes, watching carefully to prevent overflow. The apple filling should be bubbling at the edges and the topping slightly firmed up.
