Ingredients
  

For the Bread

  • cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp salt
  • cup unsalted butter melted
  • cup brown sugar packed
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 2 medium apples peeled and diced (about 1½ cups)
  • ¼ cup Greek yogurt or sour cream

For the Cinnamon Sugar Topping

  • 2 tbsp granulated sugar
  • ½ tsp ground cinnamon

Instructions
 

  • Measure all ingredients and ensure they're at room temperature for optimal mixing. If your eggs are cold, place them in warm water for 5 minutes to quickly bring them to room temperature.
  • Line a small loaf pan (approximately 7×3 inches) that fits in your air fryer with parchment paper, leaving overhang on the sides for easy removal. Lightly spray with non-stick cooking spray.
  • In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly combined.
  • In a large bowl, mix melted butter and brown sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and Greek yogurt until well-incorporated.
  • Gently fold the dry ingredients into the wet mixture, stirring just until combined. Be careful not to overmix.
  • Fold in the diced apples, ensuring they're evenly distributed throughout the batter.
  • In a small bowl, mix granulated sugar and cinnamon for the topping.
  • Pour the batter into your prepared loaf pan, smoothing the top with a spatula. Sprinkle the cinnamon sugar mixture evenly over the top.
  • Preheat your air fryer to 310°F (155°C) for 3 minutes. Place the loaf pan in the air fryer basket and cook for 30-35 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
  • Allow the bread to cool in the pan for 10 minutes before using the parchment paper to lift it out onto a cooling rack. Let it cool for at least 20 minutes before slicing.

Notes

- For extra flavor, try using a mix of tart Granny Smith and sweet Honeycrisp apples.
- Fill the loaf pan only 2/3 full to allow for proper rising.
- Avoid opening the air fryer too frequently as this reduces temperature and extends cooking time.
- Dice apples into roughly ¼-inch pieces for best texture and even cooking.
- Store at room temperature in an airtight container for up to 3 days, refrigerate for up to a week, or freeze slices for up to 3 months.
