Instructions
 

  • Rinse baby potatoes under cold water, scrubbing gently to remove any dirt while preserving the nutrient-rich skins. Pat them completely dry with paper towels. For even cooking, halve any potatoes larger than a golf ball.
  • In a medium bowl, combine the potatoes with olive oil, ensuring each potato gets a light, even coating. Add garlic powder, onion powder, kosher salt, pepper, and rosemary. Toss thoroughly until every potato is evenly seasoned.
  • Preheat your air fryer to 400°F (200°C) for 3 minutes. Arrange the potatoes in a single layer in the air fryer basket, allowing small gaps between pieces for optimal air circulation.
  • Cook the potatoes for 12-15 minutes, shaking the basket halfway through. The potatoes should develop a golden-brown exterior with a fork-tender interior. For extra crispness, add 1-2 minutes to cooking time.
  • If using Parmesan cheese, sprinkle it over the hot potatoes immediately after cooking, allowing residual heat to melt it slightly. Transfer to a serving dish and garnish with fresh herbs if desired. Serve immediately.
