Ingredients
  

  • 2 large sweet potatoes about 1 pound, scrubbed clean
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper adjust to taste for heat preference
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • fresh parsley chopped, for garnish

Instructions
 

  • Cut the sweet potatoes lengthwise into quarters, then slice each quarter into 2-3 wedges of even thickness (about 1/2 inch thick).
  • In a large bowl, combine olive oil, Cajun seasoning, garlic powder, paprika, cayenne pepper, salt, and black pepper. Whisk together until well mixed.
  • Add sweet potato wedges to the bowl with the spice mixture and toss until every piece is thoroughly coated.
  • Preheat your air fryer to 380°F (193°C) for 3 minutes.
  • Place the seasoned wedges in your air fryer basket in a single layer, ensuring they don't overlap. Cook in batches if necessary.
  • Cook for 8-10 minutes, then flip the wedges and cook for an additional 8-10 minutes until they're golden brown and crispy on the outside, tender on the inside.
  • Transfer the cooked wedges to a serving plate, sprinkle with freshly chopped parsley, and serve immediately.

Notes

For the best results, don't overcrowd the air fryer basket - cook in batches if needed.
Keep the wedges uniform in size to ensure they cook at the same rate.
These wedges stay crisp for up to 2 hours at room temperature. Refrigerate leftovers in an airtight container for up to 3 days.
Revive refrigerated wedges by reheating in the air fryer at 350°F for 3-5 minutes.
