Ingredients
  

For the bread

  • 1 cup Amish Friendship Bread starter
  • 3 eggs room temperature
  • 1 cup vegetable oil or unsweetened applesauce for a lighter version
  • 1/2 cup milk
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups all-purpose flour
  • 2 medium apples peeled and diced (approximately 2 cups; Honeycrisp or Granny Smith work beautifully)
  • 1/2 cup chopped walnuts or pecans optional

For the topping

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1 tbsp butter melted

Instructions
 

  • Preheat your oven to 325°F (165°C). Grease two 9x5 inch loaf pans thoroughly, paying special attention to the corners. Line the bottom with parchment paper, leaving an overhang on the long sides for easy removal.
  • Peel, core, and dice your apples into small, uniform 1/4-inch cubes. If your apples are particularly juicy, lightly pat them with a paper towel to remove excess moisture.
  • In a large bowl, combine your friendship bread starter with eggs, oil, milk, sugar, and vanilla extract. Whisk until smooth and well incorporated, about 45 seconds.
  • In a separate medium bowl, whisk together flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring just until combined. Gently fold in the diced apples and nuts (if using).
  • In a small bowl, combine the sugar and cinnamon for the topping.
  • Divide the batter evenly between your prepared loaf pans, filling each about 2/3 full. Brush the tops with melted butter, then sprinkle generously with the cinnamon-sugar topping.
  • Bake in your preheated oven for 55-60 minutes, or until a toothpick inserted in the center comes out clean with a few moist crumbs. If the tops begin browning too quickly, loosely cover with aluminum foil after about 40 minutes.
  • Allow the bread to cool in the pans for 15 minutes before transferring to a wire rack to cool completely.

Notes

The bread actually improves overnight as flavors meld. For a more intense apple flavor, try substituting 1/4 cup of the milk with apple cider or unsweetened apple juice. Store in an airtight container at room temperature for up to 3 days, refrigerate for up to a week, or freeze slices for up to 3 months.
