Equipment

  • Wooden skewers or decorative toothpicks
  • Serving Platter
  • Small mixing bowl
  • Paper Towels

Ingredients

  • 8 oz fresh mozzarella pearls drained
  • 4 oz genoa salami cut into quarters
  • 4 oz prosciutto cut into 1-inch pieces
  • 1 cup cherry tomatoes
  • 1 cup marinated artichoke hearts drained and halved
  • 1 cup pitted kalamata olives
  • 1 cup green olives pitted
  • 1 cup roasted red peppers cut into 1-inch pieces
  • 1 cup fresh basil leaves
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic glaze
  • 1 tsp Italian seasoning
  • salt and freshly ground black pepper to taste

Instructions

  • Gather all ingredients and ensure they're properly drained and cut to similar sizes. Pat the mozzarella pearls with paper towels to remove excess moisture.
  • In a small bowl, whisk together the olive oil, half of the balsamic glaze, Italian seasoning, salt, and pepper to create the marinade.
  • Gently toss the mozzarella pearls, artichoke hearts, and roasted red peppers in the marinade. Allow them to sit for at least 10 minutes.
  • Assemble your antipasto skewers by alternating ingredients. For a classic approach, thread a folded piece of prosciutto, mozzarella pearl, folded basil leaf, cherry tomato, salami, olive, and artichoke heart onto each skewer. Create varied combinations for visual interest.
  • Place your completed antipasto skewers on a serving platter, arranging them in concentric circles or rows. Drizzle the remaining balsamic glaze over the arranged skewers, and sprinkle with a little extra Italian seasoning. For holiday flair, garnish the platter with fresh rosemary sprigs.
  • If time allows, chill for 30 minutes before serving. For optimal flavor, let stand at room temperature for 15-20 minutes before serving.

Notes

- For a milder flavor, swap kalamata olives with black olives
- Replace prosciutto with thinly sliced ham for a more budget-friendly option
- Use mini cucumber slices instead of artichoke hearts for a crisp alternative
- Swap mozzarella pearls with cubed provolone for a sharper flavor profile
- For a meat-free version, use marinated mushrooms in place of salami
- Assembled skewers can be prepared up to 4 hours ahead and refrigerated
- For advance preparation beyond 4 hours, keep all ingredients separate and assemble just before serving
