  • 1/3 cup maple syrup or honey
  • 1/4 cup coconut oil, melted or unsweetened applesauce for oil-free version
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the rolled oats, oat flour, ground flaxseed, baking powder, cinnamon, nutmeg, and salt.
  • In a separate bowl, whisk together the apple butter, maple syrup, melted coconut oil, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients, stirring until well combined. Fold in the optional nuts and dried fruit. The dough will be thick and slightly sticky.
  • Using a ¼-cup measuring cup or large cookie scoop, portion the dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon or your dampened fingertips.
  • Bake for 15-18 minutes, or until the edges are golden brown and the cookies feel set. For softer cookies, aim for the shorter end of the baking range.
  • Allow the cookies to cool completely on the baking sheet—this crucial step allows the flavors to meld and the texture to reach its perfect consistency.
  • Once cooled, transfer to an airtight container for storage.

Notes

These cookies are great for meal prep and can be stored at room temperature for up to 3 days, refrigerated for up to 7 days, or frozen for up to 3 months. For a lower sugar option, reduce maple syrup to ¼ cup and add 2 tablespoons of unsweetened applesauce. Pair with Greek yogurt or fresh apple slices for a complete breakfast.
