  • 2 cups all-purpose flour substitute whole wheat pastry flour for added nutrition
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup granulated sugar honey or maple syrup can be substituted
  • 1 tsp fresh thyme leaves optional but highly recommended

Wet Ingredients

  • 6 tbsp cold unsalted butter cubed
  • 1 large egg
  • 1/2 cup cold heavy cream or buttermilk for tangier scones, plus extra for brushing
  • 1 tbsp whole grain mustard optional for extra savory depth

Mix-ins and Toppings

  • 1 cup sharp cheddar cheese grated (aged cheddar provides the most robust flavor)
  • 1 medium Granny Smith apple peeled and diced (about 3/4 cup)
  • flaky sea salt for sprinkling

Instructions
 

  • Position your oven rack in the center and preheat to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, salt, sugar, and thyme (if using) until fully combined.
  • Add the cold cubed butter to the flour mixture. Using a pastry cutter or two knives, cut the butter into the flour until it resembles coarse crumbs with some pea-sized pieces remaining.
  • In a separate small bowl, whisk together the egg and cream. If using whole grain mustard, add it to this mixture. Pour this liquid into the flour-butter mixture and stir just until the dough begins to come together.
  • Gently fold in the diced apples and grated cheddar until just distributed. Be careful not to overmix.
  • Turn the dough onto a lightly floured surface and pat it into a circle about 1-inch thick. Cut the circle into 8 equal triangles and transfer to your prepared baking sheet, spacing them about 2 inches apart.
  • Refrigerate the shaped scones for 15 minutes. Then brush the tops with a little cream and sprinkle with flaky sea salt.
  • Bake for 20-25 minutes until golden brown and cooked through. A scone should sound hollow when tapped on the bottom.
  • Allow to cool slightly on the baking sheet before transferring to a wire rack. Serve warm.

Notes

For best results, ensure all ingredients are cold before mixing. You can place your cheese in the freezer for 10 minutes before grating to make it easier to work with. These scones can be frozen unbaked for up to 3 months - simply bake from frozen, adding 3-5 minutes to the baking time.
