  • 6-7 medium apples preferably a mix of Honeycrisp and Granny Smith
  • 2 cups apple cider unfiltered yields more robust flavor
  • 1/4 cup brown sugar coconut sugar works as a less refined alternative
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon cornstarch arrowroot powder makes a good substitute
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 pinch salt

Crisp Topping

  • 1 cup old-fashioned rolled oats not quick oats
  • 3/4 cup all-purpose flour can substitute 1:1 gluten-free flour blend
  • 2/3 cup brown sugar
  • 1/2 cup cold butter cubed (plant-based butter works for dairy-free option)
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped pecans or walnuts optional but adds wonderful texture
  • 1 pinch salt

Instructions
 

  • Pour 2 cups of apple cider into a medium saucepan and bring to a gentle boil over medium heat. Reduce heat and simmer uncovered for about 25-30 minutes until the cider has reduced to about ½ cup of syrupy liquid. Watch carefully during the final minutes to prevent burning.
  • Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish. Peel, core, and slice apples into ¼-inch thick pieces.
  • In a large bowl, gently toss the sliced apples with lemon juice to prevent browning. Add brown sugar, cornstarch, cinnamon, nutmeg, cloves, and salt. Pour in ¼ cup of the reduced apple cider (reserving the remaining ¼ cup for the final glaze). Toss until apples are evenly coated.
  • In a separate bowl, combine oats, flour, brown sugar, cinnamon, optional nuts, and salt. Add cold cubed butter and use a pastry cutter or your fingertips to work the mixture until it resembles coarse crumbs with pea-sized butter pieces.
  • Transfer the apple mixture to your prepared baking dish, spreading it evenly. Sprinkle the crisp topping uniformly over the apples, making sure to cover the entire surface. Bake in the preheated oven for 40-45 minutes until the topping is golden brown and the filling is bubbling around the edges.
  • Remove from the oven and immediately drizzle the remaining ¼ cup of reduced apple cider over the hot crisp. Allow to rest for at least 20 minutes before serving to let the glaze set and flavors meld together.

Notes

For a healthier version, replace brown sugar with monk fruit sweetener and reduce the amount. Use gluten-free flour if needed. For vegan version, replace butter with cold coconut oil or plant-based butter sticks.
Store covered at room temperature for up to 24 hours. For longer storage, refrigerate for up to 5 days. To freeze, cool completely, wrap tightly, and freeze for up to 3 months.
Serve warm with a scoop of vanilla ice cream or whipped cream for the perfect contrast to the warm spiced apples.
