Apple Pie Filling
- 2 apples Honeycrisp or Granny Smith, diced into small cubes
- 1 tablespoon butter or coconut oil
- 1 tablespoon maple syrup or honey
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves optional
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Parfait Layers
- 2 cups plain Greek yogurt or dairy-free alternatives like coconut or almond yogurt
- 1 cup granola homemade or store-bought
- 2 tablespoons chopped walnuts or pecans
- maple syrup or honey for drizzling, optional
In a medium-sized skillet, melt the butter or coconut oil over medium heat. Add the diced apples, maple syrup, cinnamon, nutmeg, and cloves if using. Stir to coat the apples evenly with the spices.
Cook for 6-8 minutes, stirring occasionally, until the apples are tender but still hold their shape. For softer apples, cover the pan for 2-3 minutes during cooking.
Once the apples are cooked to your liking, remove from heat and stir in the lemon juice and vanilla extract. Allow the mixture to cool for about 5 minutes.
While the apples are cooling, divide half of the yogurt between two serving glasses or jars.
Sprinkle about ¼ cup of granola over each yogurt base. Press the granola gently into the yogurt to create a stable foundation.
Spoon half of the cooled apple mixture over the granola layer in each glass.
Add the remaining yogurt on top of the apple layer, followed by the rest of your granola.
Top with the remaining apple pie filling. Sprinkle each parfait with chopped nuts and drizzle with additional maple syrup or honey if desired.
For meal prep, prepare the apple mixture up to 4 days in advance and store in an airtight container in the refrigerator.
For the freshest experience, store the yogurt, apple mixture, and granola separately and assemble just before eating.
If preparing fully assembled parfaits, they'll keep in the refrigerator for up to 2 days, though the granola will soften over time.
For a completely no-cook version, simply dice the apples very small, toss with lemon juice to prevent browning, and mix with the spices and sweetener.
