- 2 sheets puff pastry thawed but still cold
- 1 egg beaten with 1 tablespoon water for egg wash
Filling
- 14 oz artichoke hearts canned, drained and finely chopped
- 8 oz cream cheese softened
- 1/2 cup Parmesan cheese grated
- 1/4 cup mayonnaise
- 3 cloves garlic minced
- 1 tsp lemon zest
- 1 tbsp lemon juice fresh
- 1/4 tsp red pepper flakes optional
- 1/2 tsp dried thyme
- salt and pepper to taste
In a medium bowl, combine the cream cheese, mayonnaise, and Parmesan cheese until smooth and well incorporated.
Fold in the finely chopped artichoke hearts, minced garlic, lemon zest, lemon juice, red pepper flakes (if using), and dried thyme. Season with salt and pepper to taste.
On a lightly floured surface, roll out each puff pastry sheet to smooth any creases. Cut each sheet into 16 equal squares (about 2.5 inches each).
Place about 1 tablespoon of the artichoke mixture in the center of each pastry square. Fold the corners toward the center, creating a flower-like shape, or pinch opposite corners together to form a smaller square envelope.
Place the assembled bites on parchment-lined baking sheets and refrigerate for 15 minutes.
Preheat oven to 400°F (200°C). Brush the chilled pastries with egg wash.
Bake for 18-22 minutes, or until the pastry is puffed and golden brown. Rotate baking sheets halfway through for even browning.
Allow to cool slightly before serving. Garnish with fresh herbs if desired.
