Ingredients
  

Shrimp and Bacon

  • 1 pound large shrimp (16-20 count) peeled and deveined, tails on
  • 10 slices thin-cut bacon cut in half crosswise

Marinade

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon brown sugar optional
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Pat the shrimp dry with paper towels. If needed, remove any remaining vein by making a shallow cut along the back and lifting it out with the tip of your knife.
  • In a medium bowl, whisk together olive oil, lemon juice, minced garlic, smoked paprika, cayenne pepper, brown sugar (if using), salt, and black pepper until well combined.
  • Add the shrimp to the marinade, gently tossing to ensure each piece is thoroughly coated. Allow them to marinate for 15-20 minutes, but no longer than 30 minutes.
  • While the shrimp marinate, preheat your oven to 425°F (220°C). Soak wooden toothpicks or skewers in water for at least 30 minutes to prevent burning.
  • Partially cook the bacon slices until they're just beginning to render fat but are still pliable – about 3-4 minutes in a skillet. Transfer to a paper towel-lined plate to cool slightly.
  • Take each marinated shrimp and wrap it with a half slice of partially cooked bacon, starting at the head and spiraling down to the tail. Secure with a soaked wooden toothpick or skewer.
  • Arrange the wrapped shrimp on a baking sheet lined with parchment paper or a wire rack set over a baking sheet. Ensure they're not touching to allow for even cooking.
  • Bake for 10-12 minutes, turning halfway through, until the bacon is crispy and the shrimp are pink and opaque. Watch carefully to prevent overcooking.
  • Remove from the oven and serve immediately for the best texture and flavor.

Notes

For grilling: Grill over medium-high heat for 2-3 minutes per side until bacon is crisp and shrimp are cooked through.
Choose thinner bacon slices rather than thick-cut varieties, as they'll crisp up more effectively.
For maximum flavor infusion, slightly score the outer curve of each shrimp before marinating.
Properly cooked shrimp turn from translucent gray to opaque pink and form a loose "C" shape. If they curl into a tight "O" shape, they're overcooked.
