  • 3-4 medium apples Honeycrisp, Gala, or Pink Lady work best
  • 1-2 tsp ground cinnamon

  • 1/4 tsp nutmeg optional
  • 1 tbsp coconut sugar optional, for a sweeter chip

Instructions
 

  • Preheat your oven to 225°F (107°C). Line two baking sheets with parchment paper or silicone baking mats.
  • Thoroughly wash your apples under cool water. Using an apple corer, remove the centers. No need to peel – the skin contains valuable nutrients and helps the chips hold their shape!
  • Slice your apples as thinly as possible – ideally 1/16 inch (1.5mm) thick. A mandoline slicer works wonderfully here, but a sharp knife works too.
  • Arrange apple slices in a single layer on prepared baking sheets, ensuring they don't overlap. Lightly dust with cinnamon (and optional nutmeg or coconut sugar).
  • Bake for 1 hour, then flip each slice over. Continue baking for another 1-1.5 hours, checking every 30 minutes to prevent burning.
  • Once baked, turn off the oven but leave the chips inside with the door ajar for about 30 minutes. This allows them to crisp up perfectly as they cool gradually.

Notes

Storing Tips: For maximum crispness, cool completely before storing. Store in an airtight container at room temperature for up to 1 week. Add a food-grade silica gel packet to the storage container to maintain crispness in humid environments. If chips lose their crunch, refresh them in a 200°F oven for 5-10 minutes.
Spice Variations: Try cardamom, ginger, or Chinese five-spice for unique flavor profiles. For a zero-sugar option, use a combination of cinnamon and monk fruit sweetener.
Air Fryer Option: Prepare in an air fryer at 300°F for about 15-20 minutes for a quicker version (though oven-baked develops better flavor).
