Ingredients
  

  • 8 oz block of high-quality feta cheese Greek feta preferred for authenticity
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons high-quality honey
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried
  • 1 teaspoon red pepper flakes adjust to your heat preference
  • 1 lemon zest only
  • 1/4 cup chopped walnuts or pine nuts
  • freshly ground black pepper to taste
  • crusty bread or crackers for serving

Instructions
 

  • Preheat your oven to 375°F (190°C). Pat your feta block dry with paper towels. Place the feta in a small, oven-safe baking dish that snugly fits the cheese.
  • Drizzle 1 tablespoon of olive oil over the feta, ensuring it coats the top surface. Sprinkle half of the thyme leaves and a light dusting of black pepper.
  • Bake the feta for 15-20 minutes until it's softened but still maintains its shape. You'll know it's ready when the edges have slightly golden notes and the center yields gently when pressed.
  • While the feta bakes, prepare your honey drizzle by warming 3 tablespoons of honey with the remaining tablespoon of olive oil in a small saucepan over low heat. Stir in the red pepper flakes and lemon zest.
  • Remove the baked feta from the oven and immediately drizzle with the honey mixture. Sprinkle with the remaining thyme, the chopped nuts, and a final touch of freshly ground black pepper. Serve while still warm.

Notes

Allow the dish to rest for 3-5 minutes before serving to let flavors integrate. The soft cheese needs crunchy accompaniments for the full sensory experience. Best enjoyed fresh, but can be refrigerated for up to 2 days. Reheat gently in a 250°F oven for 10 minutes, adding fresh herbs after warming.
