Ingredients
  

For the Patties

  • 1/2 pound ground beef 80/20 lean-to-fat ratio
  • 1/2 pound ground pork
  • 1 small onion finely minced
  • 2 garlic cloves minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 egg lightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

For Assembly

  • 12 slider buns brioche or potato rolls
  • 6 slices cheddar cheese cut into quarters (or pepper jack)

  • 2 roma tomatoes thinly sliced
  • 1 red onion thinly sliced
  • pickle slices
  • condiments ketchup, mustard, mayo, or special sauce

Instructions
 

  • In a large bowl, combine ground beef and pork using your hands. Mix gently to avoid overworking the meat.
  • Fold in minced onion, garlic, Worcestershire sauce, smoked paprika, and oregano.
  • Add the beaten egg, salt, and pepper. Mix just until combined—about 10-15 seconds of folding.
  • Cover the bowl and let the mixture rest in the refrigerator for 30 minutes to allow flavors to meld.
  • Divide the mixture into 12 equal portions (about 1.5 oz each). Roll each into a ball, then gently press to form patties slightly larger than your buns.
  • Create a small dimple in the center of each patty with your thumb to prevent puffing during cooking.
  • Heat a cast-iron skillet or grill to medium-high heat. Cook sliders for 2-3 minutes per side for medium doneness.
  • For the last minute of cooking, add cheese if desired and cover to melt. The internal temperature should reach 160°F.
  • Lightly toast your buns for 30 seconds on the cooking surface.
  • Assemble sliders with condiments, lettuce, cooked patties, tomato, onion, and pickles. Secure with a decorative toothpick if desired.

Notes

For juicier sliders, avoid pressing down on the patties while cooking as this forces out the juices. The combination of beef and pork creates a more complex flavor than using either meat alone. You can prepare the patties up to 24 hours in advance and keep them refrigerated until cooking time.
