Ingredients
  

For the salad

  • 2 cups mixed berries strawberries, blueberries, and raspberries
  • 1 pint cherry tomatoes halved
  • 8 slices bacon cooked crispy and crumbled
  • 4 cups mixed greens arugula and spinach work wonderfully
  • 1/4 red onion thinly sliced
  • 1/3 cup feta cheese crumbled
  • 1/4 cup sliced almonds toasted

For the dressing

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic small, minced
  • salt and freshly ground black pepper to taste

Instructions
 

  • Cook the bacon in a skillet over medium heat until crispy, about 8-10 minutes. Transfer to paper towels to drain excess fat and cool before crumbling.
  • Gently wash and dry the berries. Hull and quarter the strawberries, keeping blueberries and raspberries whole. Halve the cherry tomatoes.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper until emulsified.
  • In a large salad bowl, arrange the mixed greens as your base. Layer on the prepared berries, tomatoes, red onion slices, crumbled bacon, feta cheese, and toasted almonds.
  • Drizzle the dressing over the salad just before serving, then gently toss to ensure even coating. Serve immediately.

Notes

For best results, bring berries and tomatoes to room temperature before serving for maximum flavor.
For a prettier presentation, arrange ingredients in sections over the greens rather than tossing everything together immediately.
Save a tablespoon of bacon fat to whisk into your dressing for an incredible flavor boost.
