- 3 cups fresh corn kernels or 2 15-oz cans, drained
- 8 oz cream cheese softened
- 1 cup sour cream
- 1 cup mayonnaise
- 2 cups shredded Mexican cheese blend
- 1 can diced green chilies 4 oz
- 1 jalapeño seeds removed and finely diced
- 3 green onions thinly sliced
- 2 cloves garlic minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika

If using fresh corn, grill or roast it first for a deeper, more complex flavor. Remove kernels from cobs (or drain canned corn thoroughly). In a skillet over medium-high heat, sauté corn for 5-7 minutes until slightly charred.
In a large mixing bowl, combine softened cream cheese, sour cream, and mayonnaise until smooth and well integrated.
