Ingredients
  

  • 1 sheet puff pastry approximately 320g, thawed but still cold
  • 6 oz soft goat cheese (chèvre) room temperature
  • 3 tablespoons honey plus extra for drizzling
  • 1 teaspoon fresh thyme leaves chopped (or ½ teaspoon dried)
  • 1 lemon zest only
  • 1 cup fresh blackberries lightly mashed
  • 1 egg beaten (for egg wash)
  • 1/4 cup chopped pistachios optional, for garnish
  • flaky sea salt for sprinkling

Instructions
 

  • In a medium bowl, combine the room-temperature goat cheese, 2 tablespoons of honey, chopped thyme leaves, and lemon zest. Mix thoroughly until smooth and well incorporated.
  • Unfold your thawed puff pastry sheet onto a lightly floured surface. Using a rolling pin, gently roll the pastry into a 12×12-inch square, being careful not to press too hard.
  • Spread the goat cheese mixture evenly over the entire surface of the pastry, leaving a ½-inch border around the edges. Next, gently distribute the mashed blackberries over the goat cheese layer.
  • Using a sharp knife or pizza cutter, cut the pastry into 12 equal strips (approximately 1-inch wide). Take each strip and twist 3-4 times, creating a spiral effect.
  • Place the twisted strips on a parchment-lined baking sheet, spacing them about 1 inch apart. Chill in the refrigerator for 15 minutes to firm up. Meanwhile, preheat your oven to 400°F (200°C).
  • Brush each twist lightly with beaten egg and sprinkle with a small amount of flaky sea salt. Bake for 18-22 minutes, or until the twists are puffed up and golden brown.
  • Transfer the baked twists to a cooling rack. While still warm, drizzle with the remaining tablespoon of honey and sprinkle with chopped pistachios if using.
