  • 2 cups cooked chicken breast diced (rotisserie chicken works beautifully)
  • 6 strips bacon cooked and crumbled
  • 1 cup cherry tomatoes halved
  • 4 cups romaine lettuce chopped
  • 1/2 cup red onion finely diced
  • 1 avocado diced (optional)

Dressing

  • 1/3 cup mayonnaise
  • 2 tablespoons plain Greek yogurt adds creaminess with less calories
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste

Instructions
 

  • Cook the bacon strips until crispy in a skillet over medium heat, about 3-4 minutes per side. Once done, place on paper towels to drain excess grease. When cooled, crumble into bite-sized pieces.
  • In a small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, garlic powder, salt, and pepper until smooth.
  • In a large bowl, combine the diced chicken, crumbled bacon, halved cherry tomatoes, and diced red onion. Gently toss to distribute ingredients evenly. If using avocado, add it last to prevent it from becoming mushy during mixing.
  • Pour the prepared dressing over the chicken mixture and fold gently to coat all ingredients evenly. About 5-7 gentle folds should do it.
  • Line a serving platter or individual plates with the chopped romaine lettuce. Spoon the BLT chicken salad mixture over the lettuce bed. For a visually appealing presentation, sprinkle additional bacon bits and a few cherry tomato halves on top.

Notes

For a lighter version, replace half the mayonnaise with additional Greek yogurt.
Turkey bacon can substitute regular bacon for a leaner option.
For meal prep, keep components separate and assemble just before eating.
Store in airtight containers in the refrigerator for up to 3 days.
If making ahead, reserve half the bacon to add just before serving for optimal crispness.
