If using large mozzarella balls, slice them into uniform 1/4-inch thick rounds. For tomatoes, create slices of similar thickness. Pat the mozzarella dry with paper towels to prevent excess moisture.
Begin by visualizing a candy cane shape on your board. Start at the top with a curved hook and extend downward in a straight line. Use tomatoes to outline the entire shape first.
Alternate rows of mozzarella and tomatoes to create the classic red and white candy cane stripes. Place each piece slightly overlapping the previous one for a seamless appearance.
