Equipment

  • Large Pot
  • Colander
  • Mixing Bowl

Ingredients

  • 12 oz short pasta fusilli, penne, or bowtie
  • 2 cups cherry tomatoes halved
  • 8 oz fresh mozzarella pearls or 1 large ball, cubed
  • 1/2 cup fresh basil leaves torn or chiffonade
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes optional

Instructions

  • Bring a large pot of salted water to a rolling boil. Add your pasta and cook according to package directions until al dente (typically 8-10 minutes). Aim for the lower end of the recommended cooking time for the perfect pasta salad texture.
  • While the pasta cooks, halve the cherry tomatoes and place them in a large mixing bowl. If using a large ball of mozzarella, cut it into bite-sized cubes.
  • In a small bowl, whisk together the olive oil, minced garlic, salt, pepper, and red pepper flakes (if using).
  • Drain the pasta in a colander and rinse briefly with cold water to stop the cooking process. Give it a gentle shake to remove excess water. Let it cool for about 5 minutes.
  • Add the cooled pasta to the bowl with tomatoes. Add the mozzarella and torn basil leaves, reserving a few basil leaves for garnish. Pour the dressing over everything and toss gently to combine.
  • Drizzle the balsamic glaze over the salad just before serving. Garnish with the reserved basil leaves.

Notes

For best results, serve at room temperature rather than cold from the refrigerator to allow the flavors to fully develop. If making ahead, consider adding the basil and balsamic glaze just before serving to maintain their fresh appearance and flavor.
