Ingredients
  

  • 6 medium apples preferably a mix of sweet and tart varieties like Honeycrisp, Granny Smith, or Gala
  • 3 tablespoons unsalted butter
  • 1/3 cup brown sugar light or dark
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves optional
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 tablespoons water

Instructions
 

  • Peel, core, and dice the apples into roughly 1-inch cubes. Toss the cut apples with lemon juice immediately to prevent browning.
  • In a large, heavy-bottomed skillet or saucepan, melt the butter over medium heat until it begins to foam slightly.
  • Add the brown sugar and whisk constantly for 1-2 minutes until the mixture becomes smooth and slightly darkened.
  • Gently add the diced apples to the caramel mixture, along with the cinnamon, nutmeg, cloves (if using), and salt. Stir to coat the apples evenly with the caramel sauce.
  • Pour in the 2 tablespoons of water, stir again, and reduce the heat to medium-low. Cover the pan and let the apples simmer for 10-12 minutes, stirring occasionally.
  • Remove the pan from heat and stir in the vanilla extract. Let the mixture cool for 5 minutes before serving – the sauce will thicken slightly as it cools.

Notes

For firmer chunks, check at 8 minutes; for a softer, more compote-like consistency, you might need up to 15 minutes.
You can leave the peels on for a more rustic presentation and added fiber.
These apples keep in the refrigerator for up to 5 days and can be frozen for up to 3 months.
For a healthier version, reduce the brown sugar to 2 tablespoons or substitute with 1/4 cup maple syrup or honey.
