Ingredients
  

  • 3 ripe avocados halved and pitted
  • 2 ripe peaches diced into ¼-inch cubes (about 1 cup)
  • 1-2 chipotle peppers in adobo sauce finely minced
  • 1 tsp adobo sauce from can
  • 1/2 red onion finely diced
  • 1 jalapeño seeds removed and minced
  • 1/4 cup fresh cilantro chopped
  • 2 tbsp fresh lime juice
  • 1 clove garlic minced
  • 1/2 tsp ground cumin
  • salt and pepper to taste

Instructions
 

  • Scoop the avocado flesh into a medium bowl. Use a fork to mash to your preferred consistency, leaving some small chunks for texture.
  • Add the minced garlic, cumin, lime juice, salt, and pepper to the mashed avocados. Stir to combine thoroughly.
  • Fold in the minced chipotle pepper and adobo sauce, adjusting to your personal heat preference.
  • Gently fold in the diced peaches, red onion, jalapeño, and cilantro using a folding motion to preserve the texture integrity of your ingredients.
  • Cover the guacamole with plastic wrap pressed directly onto the surface and refrigerate for 30 minutes to allow flavors to meld.
  • Before serving, taste and adjust seasonings if necessary.

Notes

Feel free to substitute nectarines or mangoes if peaches are unavailable. For less heat, use only ½ chipotle pepper or substitute with ¼ teaspoon smoked paprika. To keep guacamole from browning, place plastic wrap directly on the surface before storing.
