Ingredients
  

Graham Cracker Crust

  • 2 cups graham cracker crumbs about 16 full sheets
  • 1/2 cup unsalted butter melted (1 stick)
  • 1/4 cup granulated sugar
  • 1 pinch salt

Chocolate Filling

  • 2 cups semi-sweet chocolate chips
  • 1 cup heavy cream
  • 1/4 cup unsalted butter
  • 2 tsp vanilla extract
  • 1 pinch salt

Rocky Road Topping

  • 1 1/2 cups mini marshmallows
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup toasted almonds roughly chopped
  • 2 tbsp chocolate syrup for drizzling

Instructions
 

  • Combine the graham cracker crumbs, melted butter, sugar, and salt in a medium bowl, mixing until the texture resembles wet sand. Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate, using the bottom of a measuring cup to create an even, compact surface. Place in the refrigerator to chill while preparing the filling.
  • In a medium saucepan, heat the heavy cream until it just begins to simmer at the edges (do not boil). Remove from heat and add the chocolate chips and butter, allowing them to sit undisturbed for 3 minutes. Gently whisk until smooth, then stir in the vanilla extract and salt.
  • Pour the smooth chocolate filling into the chilled graham cracker crust, gently tapping the pie plate on the counter to release any air bubbles and create a level surface. Return to the refrigerator and chill for at least 2 hours or until the filling has set to a fudgy consistency.
  • Once the chocolate layer has set, sprinkle the mini marshmallows, additional chocolate chips, and toasted almonds evenly across the top of the pie. Gently press them into the surface to ensure they adhere to the chocolate layer.
  • Drizzle the chocolate syrup over the rocky road toppings in a zigzag pattern for visual appeal. Return the pie to the refrigerator and chill for at least another 2 hours before serving, allowing all elements to fully set and flavors to meld.
