Ingredients
  

  • 16 oz cream cheese softened (can substitute 1/3 less fat cream cheese)
  • 1 cup sour cream Greek yogurt works as a tangier alternative
  • 1 packet ranch dressing mix
  • 2 cups shredded cheddar cheese sharp provides more flavor intensity
  • 1/2 cup cooked and crumbled bacon about 8 slices, turkey bacon works too
  • 1 can corn kernels drained (or 1.5 cups fresh/frozen corn)
  • 1 can diced green chilies 4 oz
  • 3 jalapeños seeds removed and finely diced (adjust according to spice preference)
  • 4 green onions thinly sliced
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper

Instructions
 

  • In a large mixing bowl, combine the softened cream cheese and sour cream. Beat with an electric mixer until smooth and fully incorporated.
  • Sprinkle the ranch dressing mix, garlic powder, smoked paprika, and black pepper over the cream cheese mixture. Fold in gently until evenly distributed.
  • Add the shredded cheddar cheese, crumbled bacon, drained corn, green chilies, and diced jalapeños to the bowl. Stir until all ingredients are well combined.
  • Fold in the sliced green onions, reserving a small amount for garnish.
  • For cold dip: Transfer to a serving bowl, cover, and refrigerate for at least 30 minutes to allow flavors to meld.
  • For hot dip: Transfer to an oven-safe dish and bake at 350°F for 20 minutes until bubbly around the edges.
  • Serve with tortilla chips, vegetable crudités, pretzel bites, or toasted baguette slices.

Notes

The dip can be made up to 24 hours in advance and stored in the refrigerator. Flavors actually improve with time.
If the dip seems too thick after refrigeration, allow it to sit at room temperature for 15 minutes before serving.
Leftovers can be refrigerated in an airtight container for up to 4 days.
Not recommended for freezing as dairy components may separate upon thawing.
