Ingredients
  

  • 1 package (17.3 oz) frozen puff pastry thawed (2 sheets)
  • 8 oz brie cheese rind removed and cut into small cubes
  • 3/4 cup cranberry sauce homemade or store-bought
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon honey
  • 1 large egg beaten (for egg wash)
  • 1/4 cup chopped pecans optional
  • 1 pinch sea salt

Instructions
 

  • Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper. Allow your puff pastry to thaw at room temperature until pliable but still cold—about 30-40 minutes.
  • On a lightly floured surface, gently unfold one puff pastry sheet. Using a sharp knife or pizza cutter, cut the sheet into 24 equal squares (make 5 cuts in each direction to create a 6×4 grid).
  • Lightly spray a 24-cup mini muffin tin with cooking spray. Press each puff pastry square into a cup, gently forming it to create a small tart shell.
  • Place a small cube of brie (about 1 teaspoon) into each pastry cup. Follow with a small dollop (approximately ½ teaspoon) of cranberry sauce on top of each cheese piece.
  • Sprinkle a few thyme leaves over each bite. If using pecans, add a few pieces on top.
  • Lightly brush the visible pastry edges with beaten egg.
  • Bake for 15-18 minutes, until the pastry is puffed and golden brown and the cheese is fully melted. Rotate the pan halfway through baking for even browning.
  • Remove from oven and let cool in the pan for 5 minutes. Drizzle lightly with honey and sprinkle with a tiny pinch of sea salt. Carefully transfer to a serving platter using a small offset spatula or spoon.

- For best results, keep the second sheet of puff pastry refrigerated while working with the first.
- Avoid overfilling the cups to prevent overflow during baking.
- These bites can be assembled up to 24 hours in advance and kept refrigerated before baking.
- Baked bites can be stored in an airtight container in the refrigerator for up to 2 days.
- For make-ahead freezing, freeze assembled but unbaked bites for up to 1 month—simply add 3-5 minutes to the baking time when cooking from frozen.
