  • 12 mini sweet peppers red, orange, and yellow for visual appeal
  • 1 package Boursin cheese Garlic & Herb flavor, 5.2 oz, at room temperature
  • 2 tablespoons cream cheese softened
  • 1 tablespoon fresh chives finely chopped, plus extra for garnish
  • 1 teaspoon lemon zest
  • 1/4 teaspoon freshly ground black pepper
  • 1 pinch sea salt

Instructions
 

  • Cut each mini pepper in half lengthwise, keeping the stems intact for presentation. Remove the seeds and membranes using a small spoon or knife. If needed, trim a tiny slice from the bottom of each half to create a flat surface so they stand upright.
  • In a medium bowl, combine the room-temperature Boursin cheese and cream cheese, blending until smooth and uniform.
  • Gently fold in the chopped chives, lemon zest, black pepper, and salt until well incorporated.
  • Transfer the cheese mixture to a piping bag fitted with a star tip, or use a zip-top bag with the corner snipped off. Pipe the filling into each pepper half, creating decorative swirls.
  • Sprinkle the stuffed peppers with additional chives and your choice of garnish.
  • For maximum flavor development, cover the peppers loosely and refrigerate for at least 30 minutes before serving.
  • Arrange on a serving platter with fresh herbs scattered between peppers for an impressive display.
