Ingredients
  

  • 4 boneless, skinless chicken breasts approximately 2 pounds
  • 2 tablespoons olive oil
  • salt and freshly ground black pepper to taste
  • 6 cloves garlic minced (about 2 tablespoons)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese freshly grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes optional
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels. Season generously on both sides with salt and pepper.
  • Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken breasts and sear for 3-4 minutes on each side until golden brown. Transfer chicken to a plate and set aside.
  • Reduce heat to medium and add minced garlic to the same skillet. Sauté for 30-45 seconds until fragrant but not browned.
  • Pour in chicken broth, scraping up any browned bits from the bottom of the pan. Add heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes if using. Bring to a gentle simmer, stirring frequently, and cook for 3-4 minutes until slightly thickened.
  • Return the chicken breasts to the skillet, nestling them into the sauce. Transfer the skillet to the preheated oven and bake for 15-18 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  • Remove from the oven and let the chicken rest in the sauce for 5 minutes. Garnish with fresh parsley before serving.

Notes

For a lighter version, you can replace heavy cream with half-and-half or full-fat coconut milk. You can also use boneless chicken thighs if you prefer darker meat. Store leftovers in an airtight container for up to 3 days in the refrigerator.
