Ingredients
  

  • 2 pounds boneless, skinless chicken breasts or thighs for more flavor
  • 4 tablespoons butter
  • 6 cloves garlic minced (about 2 tablespoons)
  • 1 small onion finely diced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes optional for heat
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups chicken broth low sodium preferred
  • 8 ounces cream cheese softened and cubed
  • 1 cup Parmesan cheese freshly grated, plus extra for serving
  • 12 ounces fettuccine or penne pasta
  • 1/2 cup heavy cream
  • 2 tablespoons fresh parsley chopped (for garnish)

Instructions
 

  • Place chicken breasts in the bottom of your crockpot in a single layer. Add the butter, minced garlic, and diced onion evenly over the chicken.
  • Sprinkle the Italian seasoning, red pepper flakes (if using), salt, and pepper over the chicken. Pour in 2 cups of the chicken broth, reserving the remaining cup for later.
  • Cover and cook on HIGH for 3 hours or LOW for 6 hours, until the chicken is tender enough to shred easily with two forks.
  • Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.
  • Add the cream cheese cubes and 3/4 cup of Parmesan cheese to the crockpot. Stir until the cheeses begin to melt into the liquid.
  • Add the remaining cup of chicken broth and the uncooked pasta to the crockpot. Stir well to ensure the pasta is submerged in liquid. Cover and cook on HIGH for an additional 30 minutes, or until the pasta is al dente.
  • Stir in the heavy cream and the remaining 1/4 cup of Parmesan cheese. If the sauce seems too thick, add a splash more broth or cream until you reach your desired consistency.
  • Allow the pasta to rest for 5 minutes before serving to let the sauce thicken slightly. Garnish with fresh parsley and additional Parmesan cheese.

Notes

For enhanced flavor, consider searing the chicken breasts for 2 minutes per side before adding to the crockpot.
Avoid lifting the lid too often as each peek extends cooking time by approximately 15-20 minutes.
Always grate your own cheese for the creamiest sauce, as pre-shredded cheese contains anti-caking agents.
