  • 1 pound Italian sausage sweet or hot, based on your preference
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon red pepper flakes adjust to taste
  • 4 cups chicken broth low sodium recommended
  • 14.5 oz diced tomatoes 1 can with juice
  • 8 oz tomato sauce 1 can
  • 9 oz refrigerated cheese tortellini
  • 4 cups fresh spinach roughly chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • salt and pepper to taste

Instructions
 

  • Remove the sausage from its casing and brown it in a large skillet over medium heat, breaking it into smaller pieces as it cooks (approximately 5-7 minutes). Drain excess grease if desired.
  • Transfer the browned sausage to your slow cooker. Add the diced onions, minced garlic, carrots, celery, Italian seasoning, and red pepper flakes. Pour in the chicken broth, diced tomatoes (with their juice), and tomato sauce. Stir everything together until well combined.
  • Cover the crockpot and cook on high for 4 hours or on low for 7-8 hours.
  • About 30 minutes before serving, stir in the refrigerated cheese tortellini and chopped spinach. Continue cooking until the tortellini is tender and the spinach has wilted.
  • Just before serving, stir in the heavy cream and grated Parmesan cheese until well incorporated. Allow the soup to heat through for about 5 more minutes. Taste and adjust seasoning with salt and pepper as needed.

  • If you're truly pressed for time, you can skip browning and add the raw sausage directly to the crockpot, but the flavor profile won't be quite as rich.
  • Dice your vegetables to a similar size for even cooking.
  • For extra flavor, add a Parmesan rind to simmer with the soup base (just remember to remove it before serving).
  • Don't add the tortellini too early—they'll become overly soft and begin to break apart.
