Cucumber Lemonade

Ingredients
  

For the Lemonade

  • 2 large cucumbers peeled and roughly chopped (English cucumbers work best)
  • 1 cup lemon juice freshly squeezed (approximately 6-8 lemons)
  • 1/2 cup honey or agave syrup substitute with monk fruit sweetener for sugar-free version
  • 6 cups cold water
  • 1/2 cup fresh mint leaves plus extra for garnish

For Serving

  • ice cubes
  • lemon slices for garnish
  • cucumber ribbons for garnish

Instructions
 

  • Place chopped cucumbers in a blender and process until completely smooth, about 1-2 minutes on high speed.
  • Pour the cucumber puree through a fine-mesh strainer into a large bowl, pressing with the back of a spoon to extract maximum juice. This should yield approximately 2 cups of cucumber juice.
  • In a large pitcher, combine the strained cucumber juice, freshly squeezed lemon juice, and your sweetener of choice. Whisk thoroughly until the sweetener completely dissolves.
  • Pour in cold water and add mint leaves, gently muddling them against the side of the pitcher to release their aromatic oils.
  • Let the mixture infuse for at least 30 minutes in the refrigerator.
  • Fill glasses with ice, pour in the cucumber lemonade, and garnish with lemon slices, cucumber ribbons, and fresh mint leaves.

Notes

For a sugar-free version, replace honey with monk fruit sweetener or stevia (adjust to taste, starting with 1/4 cup equivalent).
For an immune-boosting variation, add 1 tablespoon of grated ginger to the cucumber puree before blending.
For a sparkling version, substitute 2 cups of the water with sparkling water just before serving.
Save the cucumber pulp—it makes an excellent addition to smoothies or face masks!
