Casserole Base
- 2 cans refrigerated cinnamon rolls with icing 17.5 oz each
- 4 large eggs
- 1/2 cup heavy cream or milk for a lighter option
- 2 tsp vanilla extract
- 1 tbsp ground cinnamon
- 1/4 cup maple syrup plus extra for serving
Apple Mixture
- 2 medium apples peeled, cored and diced (Honeycrisp, Granny Smith, or Gala work best)
- 2 tbsp butter melted
- 1/4 cup brown sugar packed
Optional Toppings
- 1/2 cup pecans or walnuts chopped, optional
Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with butter or non-stick spray.
Open the cans of cinnamon rolls and set aside the icing packets for later use. Cut each cinnamon roll into 6 pieces using kitchen scissors for best results.
In a medium bowl, whisk together the eggs, cream, vanilla extract, cinnamon, and maple syrup until well combined and slightly frothy.
Toss the diced apples with melted butter and brown sugar in a separate bowl.
Place half of the cut cinnamon roll pieces in the prepared baking dish. Layer half of the apple mixture on top. Repeat with remaining cinnamon roll pieces and apples. If using nuts, sprinkle them evenly over the top.
Slowly pour the egg mixture evenly over the cinnamon rolls and apples, allowing it to seep into all the nooks and crannies. Gently press down with a spatula to ensure all pieces are somewhat submerged in the custard.
Bake for 35-40 minutes until the casserole is golden brown on top and set in the center. A toothpick inserted in the center should come out clean. If the top starts browning too quickly, loosely cover with aluminum foil.
While the casserole is still warm, drizzle with the reserved icing packets. For an extra-special presentation, mix the icing with 1-2 tablespoons of cream cheese for a more luxurious topping.
Allow to cool for 5-10 minutes before serving.
Serve warm with a dollop of Greek yogurt for a tangy contrast to the sweetness.
For a healthier version, use reduced-fat milk instead of heavy cream, increase the apple-to-roll ratio, and try a Greek yogurt drizzle instead of the traditional icing.
Store leftovers covered in the refrigerator for up to 3 days. Individual portions can be frozen for up to 1 month in airtight containers.
To make ahead: Prepare the casserole the night before, refrigerate unbaked, and add 10 minutes to baking time when ready to bake.
