Ingredients
  

  • 4 boneless, skinless chicken breasts about 6-8 oz each
  • 3 tablespoons olive oil or avocado oil
  • 2 tablespoons Dijon mustard
  • 1/4 cup everything bagel seasoning store-bought or homemade
  • 1 tablespoon honey optional for sweetness
  • 2 cloves garlic minced
  • 1 teaspoon salt adjust if your seasoning contains salt
  • 1/2 teaspoon black pepper
  • 1 lemon cut into wedges for serving

Instructions
 

  • Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels. If the chicken breasts are uneven in thickness, consider pounding them to an even thickness of about 3/4 inch.
  • In a small bowl, mix the olive oil, Dijon mustard, minced garlic, honey (if using), salt, and pepper.
  • Brush each chicken breast generously with the mustard-oil mixture on all sides. Pour the everything bagel seasoning onto a plate and press each chicken breast into the seasoning, turning to coat all sides evenly.
  • Place the seasoned chicken breasts on a parchment-lined baking sheet, ensuring they're not touching each other.
  • Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) when tested with a meat thermometer.
  • Allow the chicken to rest for 5-7 minutes before slicing or serving. Serve with fresh lemon wedges.

Notes

For a lower-carb version, replace the honey with a natural sweetener like monk fruit extract. Those monitoring sodium can reduce the salt and use homemade everything bagel seasoning where you control the salt content.
Greek yogurt can replace Dijon mustard for a tangier flavor profile. For a dairy-free binding agent, use 2 tablespoons of tahini.
Refrigerate leftover chicken in an airtight container for up to 3 days. This chicken also freezes well for up to 2 months.
