Ingredients
  

Casserole Base

  • 6 everything bagels slightly stale and cut into 1-inch cubes
  • 8 large eggs
  • 1 1/2 cups whole milk substitute with almond milk for a lighter option
  • 8 oz cream cheese cut into small cubes
  • 1 cup shredded cheddar cheese can substitute with Gruyère for a nuttier flavor
  • 1/2 cup grated Parmesan cheese
  • 6 slices bacon cooked and crumbled
  • 4 green onions thinly sliced
  • 2 tbsp fresh chives finely chopped
  • 2 tbsp everything bagel seasoning divided
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Optional Add-ins

  • 1/2 cup diced red bell pepper for color and nutrition
  • 1 cup baby spinach for added greens
  • 1/2 cup cherry tomatoes halved, for fresh acidity

Instructions
 

  • Generously grease a 9x13-inch baking dish with butter or cooking spray.
  • Cut your everything bagels into 1-inch cubes. If your bagels are fresh, spread the cubes on a baking sheet and toast at 300°F for about 10 minutes until slightly dried out.
  • In a large bowl, whisk together the eggs, milk, salt, pepper, and 1 tablespoon of everything bagel seasoning until well combined and slightly frothy.
  • Spread half of the bagel cubes in an even layer in your prepared baking dish. Scatter half of the cream cheese cubes, half of the bacon, and half of the green onions over the bagels.
  • Add the remaining bagel cubes on top, followed by the rest of the cream cheese, bacon, and green onions. Sprinkle with half of the cheddar and Parmesan cheeses.
  • Pour the egg mixture evenly over the entire casserole, making sure all bagel pieces get soaked. Press down gently on the top to help the liquid penetrate throughout. Cover with plastic wrap and refrigerate for at least 30 minutes or overnight.
  • Preheat your oven to 350°F. Remove the casserole from the refrigerator and let it sit at room temperature while the oven heats. Sprinkle the remaining cheddar and Parmesan cheeses on top, along with the remaining tablespoon of everything bagel seasoning.
  • Bake uncovered for 45-50 minutes until the center is set and the top is golden brown and crispy.
  • Let the casserole rest for 5-10 minutes before serving. Garnish with fresh chives and additional everything bagel seasoning if desired. Serve warm for the best flavor and texture experience.

Notes

For a lighter version, use whole grain bagels to increase fiber, substitute whole milk with unsweetened almond milk, use neufchâtel (⅓ less fat) cream cheese, or add more vegetables.
This casserole freezes well! Cut cooled casserole into individual portions, wrap each in plastic wrap and foil, and freeze for up to 2 months.
For gluten-free diets, use gluten-free bagels or bread with added everything bagel seasoning.
