Festive Christmas M&M Sugar Cookies

- 2¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- 1 cup unsalted butter softened (2 sticks)
- 1½ cups granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp almond extract optional

- 1 cup red and green M&Ms plus extra for topping
- ¼ cup white sugar for rolling
Whisk together the flour, baking soda, and baking powder in a medium bowl.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
Beat in the egg, vanilla extract, and almond extract (if using) until fully incorporated.
Gradually add the flour mixture to the wet ingredients, mixing on low speed just until combined.
Gently fold in 1 cup of red and green M&Ms using a rubber spatula.
Cover the dough and refrigerate for at least 30 minutes.
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. Place the extra ¼ cup of white sugar in a small bowl for rolling.
Roll the chilled dough into 1½-inch balls, then roll each ball in the sugar. Place them on the prepared baking sheets, leaving about 2 inches between each cookie. Gently press 3-4 additional M&Ms on top of each dough ball.
Bake for 10-12 minutes, or until the edges are just beginning to turn golden but the centers still look slightly underbaked.
Allow the cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
For softer cookies, make sure not to overbake - they should still look slightly underdone in the center when you remove them from the oven.
The dough can be refrigerated for up to 3 days or frozen for up to 2 months. If frozen, thaw overnight in the refrigerator before shaping and baking.
To maintain freshness, store cookies in an airtight container with a slice of bread - it will keep cookies soft without altering the flavor.
