Ingredients
  

For the batter

  • cups all-purpose flour substitute with gluten-free 1:1 flour blend if needed
  • ¼ cup granulated sugar coconut sugar works beautifully for a more caramel-like flavor
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • ¾ cup milk almond or oat milk for dairy-free version
  • 2 large eggs
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract

For the peach filling

  • 2 cups fresh peaches, diced about 3-4 medium peaches
  • 1 tablespoon lemon juice
  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon

For frying

  • 4 cups vegetable oil

For the glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons milk or peach juice
  • ½ teaspoon vanilla extract

Instructions
 

  • Wash, pit, and dice peaches into small ¼-inch cubes. In a bowl, combine the diced peaches with lemon juice, brown sugar, and cinnamon. Toss gently and set aside for 5 minutes to allow the flavors to meld.
  • In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
  • In a separate bowl, whisk the eggs until slightly frothy (about 30 seconds), then add milk, melted butter, and vanilla extract. Beat until well combined.
  • Pour the wet ingredients into the dry ingredients and stir just until combined. Don't overmix - small lumps are fine.
  • Gently fold in the prepared peach mixture, including any juices that have accumulated.
  • Allow the batter to rest for 10 minutes.
  • In a heavy-bottomed pot, heat oil to 350°F (175°C).
  • Using a cookie scoop or two tablespoons, carefully drop batter into the hot oil, creating fritters about 2 inches in diameter. Cook no more than 4-5 fritters at a time. Fry for 2-3 minutes per side until golden brown.
  • Remove fritters with a slotted spoon and place on a wire rack lined with paper towels. Allow to drain and cool slightly for 3-5 minutes before glazing.
  • Mix powdered sugar, milk or peach juice, and vanilla extract to create a smooth glaze. Drizzle or dip the warm fritters in the glaze while they're still warm.

Notes

- Use peaches at peak ripeness for best flavor
- For crispier fritters, maintain oil temperature at exactly 350°F
- Air frying is a healthier alternative to deep frying
- For best results, serve within 2 hours of frying
- Fritters can be stored at room temperature for up to 12 hours or refrigerated for up to 2 days
