Ingredients
  

Dip Base

  • 8 oz cream cheese softened
  • 1/2 cup sour cream
  • 1 cup dill pickles finely chopped (about 6-8 spears)
  • 2 tablespoons pickle juice

Flavor Enhancers

  • 1/4 cup Panko breadcrumbs toasted
  • 3 tablespoons fresh dill chopped
  • 2 cloves garlic minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper adjust to taste
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil for toasting breadcrumbs
  • 1/4 cup shredded cheddar cheese optional

Instructions
 

  • Thoroughly pat dry the dill pickle spears with paper towels. Finely chop the pickles into approximately 1/4-inch pieces.
  • Heat 2 tablespoons of vegetable oil in a small skillet over medium heat. Add the Panko breadcrumbs and stir constantly for 3-4 minutes until golden-brown. Remove from heat immediately and transfer to a plate to cool completely.
  • In a medium mixing bowl, beat the softened cream cheese until smooth and fluffy – about 1 minute with an electric mixer or 2-3 minutes by hand. Add the sour cream and beat for another 30 seconds until fully incorporated.
  • Fold in the chopped pickles, pickle juice, minced garlic, Worcestershire sauce, onion powder, cayenne pepper, and black pepper. If using, incorporate the shredded cheddar cheese now.
  • Gently fold in the fresh dill, reserving a small amount for garnish. Next, fold in 3/4 of the toasted breadcrumbs, saving the remainder for topping.
  • Transfer the dip to a serving bowl and sprinkle with the reserved toasted breadcrumbs and fresh dill. Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled with crackers, pretzel rods, or fresh vegetables.

Notes

For a healthier version, substitute Greek yogurt for half the cream cheese. To make it spicier, add more cayenne pepper or some finely chopped pickled jalapeños. This dip can be made up to 4 days in advance and stored in an airtight container in the refrigerator. For optimal flavor, remove from the refrigerator 15 minutes before serving.
