Ingredients
  

For the Wings

  • 2 lbs chicken wings split at joints, tips removed
  • 2 tablespoons baking powder not baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder

For the Garlic Parmesan Sauce

  • 4 tablespoons unsalted butter melted
  • 4 cloves garlic minced (about 2 tablespoons)
  • 1/2 cup Parmesan cheese freshly grated
  • 1 tablespoon fresh parsley chopped
  • 1/2 teaspoon red pepper flakes optional
  • 1 teaspoon Italian seasoning

Instructions
 

  • Preheat your oven to 400°F (200°C). Pat the chicken wings completely dry with paper towels.
  • In a large bowl, toss the wings with baking powder, salt, pepper, and garlic powder until evenly coated.
  • Line a baking sheet with aluminum foil and place a wire rack on top. Spray the rack lightly with cooking spray. Arrange the wings in a single layer on the rack, making sure they don't touch each other.
  • Bake the wings for 45 minutes, flipping them halfway through. You'll know they're done when the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy. For extra-crispy wings, broil them for the final 2-3 minutes, watching carefully to prevent burning.
  • While the wings are baking, prepare your sauce. In a small saucepan over medium-low heat, melt the butter. Add minced garlic and cook for 1-2 minutes until fragrant but not browned.
  • Remove from heat and stir in grated Parmesan cheese, parsley, red pepper flakes, and Italian seasoning.
  • Transfer the hot, crispy wings to a large bowl. Pour the garlic Parmesan sauce over them and toss gently until all wings are evenly coated.
  • Let rest for 5 minutes, then serve immediately while hot for the best texture and flavor experience.

Notes

For extra crispiness, make sure the wings are completely dry before coating with baking powder.
Use baking powder, not baking soda, as baking soda will give the wings a metallic taste.
For a dairy-free version, replace butter with olive oil and use nutritional yeast instead of Parmesan.
Store leftover wings in an airtight container in the refrigerator for up to 3 days. Reheat in a 375°F oven for 10 minutes to restore crispiness.
