Ingredients
  

  • 2 cups shredded cooked chicken rotisserie chicken works wonderfully
  • 1 cup plain Greek yogurt 2% or full-fat provides the creamiest texture
  • 4 oz reduced-fat cream cheese softened
  • 1/2 cup buffalo sauce adjust to your heat preference
  • 1/2 cup shredded part-skim mozzarella cheese
  • 1/4 cup crumbled blue cheese optional
  • 2 tablespoons ranch seasoning mix
  • 1 tablespoon fresh lemon juice
  • 2 green onions thinly sliced
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Preheat your oven to 350°F (175°C). Ensure your cream cheese has reached room temperature for optimal blending.
  • In a medium mixing bowl, blend the Greek yogurt and softened cream cheese until completely smooth.
  • Add the buffalo sauce, ranch seasoning, and lemon juice, stirring until well incorporated.
  • Fold in your shredded chicken, ensuring it's well-coated with the creamy mixture.
  • Stir in half of the mozzarella cheese. If using blue cheese, sprinkle half into the mixture.
  • Spoon the mixture into an 8×8-inch baking dish or a 9-inch pie plate. Distribute the remaining mozzarella and blue cheese (if using) evenly across the top.
  • Bake uncovered for 20 minutes, or until the edges are bubbling and the top has developed appetizing golden spots. For an extra golden finish, broil for the last 1-2 minutes, watching carefully to prevent burning.
  • Remove from oven and let rest for 5 minutes. Sprinkle with sliced green onions and fresh parsley before serving.

Notes

For a dairy-free version: Use dairy-free yogurt and vegan cream cheese.
For extra protein: Add 1/4 cup unflavored protein powder.
Heat adjustments: Use mild hot sauce or add 1-2 teaspoons of honey to temper the spice.
Serve with fresh vegetables, whole grain crackers, or as a spread for wraps and sandwiches.
Store in the refrigerator for up to 4 days. Freezing is not recommended as the yogurt can separate upon thawing.
