  • 2 slices sourdough bread or ciabatta for an authentic Italian touch
  • 4 oz fresh mozzarella sliced 1/4-inch thick
  • 1 medium ripe tomato sliced, heirloom varieties add exceptional flavor
  • 8-10 fresh basil leaves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon balsamic glaze
  • 1/2 teaspoon minced garlic
  • salt and freshly ground black pepper to taste
  • 1 tablespoon butter for grilling

Instructions
 

  • Slice your sourdough or ciabatta to your preferred thickness. For a lighter option, scoop out some of the interior bread to create more room for fillings.
  • Mix olive oil with minced garlic and a pinch of salt in a small bowl. Using a pastry brush, lightly coat the outside of each bread slice with this mixture.
  • Layer the fresh mozzarella slices evenly on one piece of bread. Follow with tomato slices, arranging them to cover the cheese completely. Season with a pinch of salt and freshly ground pepper.
  • Arrange fresh basil leaves over the tomatoes. Pro tip: Gently tear larger leaves rather than cutting them to release more of their aromatic oils.
  • Drizzle balsamic glaze over the basil layer. Close the sandwich with the second bread slice, keeping the olive oil mixture facing outward.
  • Heat a skillet over medium heat and add butter. When melted, place your sandwich in the pan and press gently with a spatula. Grill for 3-4 minutes per side until golden brown and the cheese begins to melt.

Notes

For a lighter version, use part-skim mozzarella and whole grain bread. To prevent sogginess, pat tomato slices dry before assembly. This sandwich pairs perfectly with a light arugula salad or tomato soup.
