Ingredients
  

For the Grilled Chicken

  • 2 boneless, skinless chicken breasts approximately 6-8 oz each
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

For the Caesar Dressing

  • 1/2 cup mayonnaise or Greek yogurt for a lighter option
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 2 anchovies minced (or 1 teaspoon anchovy paste; omit for vegetarian option)
  • 2 cloves garlic finely minced
  • 1/4 cup Parmesan cheese freshly grated
  • 1 tablespoon Worcestershire sauce
  • salt and freshly ground black pepper to taste

For the Salad

  • 2 heads romaine lettuce washed, dried, and torn into bite-sized pieces
  • 1 cup croutons homemade or store-bought
  • 1/3 cup Parmesan cheese freshly shaved
  • freshly ground black pepper

Instructions
 

  • Combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper in a bowl. Place chicken breasts in a shallow dish or ziplock bag and pour the marinade over them. Make sure both sides are coated evenly. Let the chicken marinate for at least 30 minutes.
  • In a medium bowl, whisk together mayonnaise, lemon juice, Dijon mustard, minced anchovies, garlic, grated Parmesan, and Worcestershire sauce until smooth and well combined. Season with salt and pepper to taste.
  • Preheat your grill or grill pan to medium-high heat. Remove chicken from the marinade and grill for approximately 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes before slicing.
  • Place the romaine lettuce in a large serving bowl. Drizzle with about half of the Caesar dressing and toss to coat evenly. Add more dressing as needed.
  • Slice the grilled chicken against the grain into strips. Arrange the chicken slices on top of the dressed lettuce. Sprinkle with croutons, freshly shaved Parmesan, and a crack of fresh black pepper. For an extra touch of freshness, add a small squeeze of lemon juice over the top just before serving.

Notes

For meal prep, store all components separately. Grilled chicken will keep for 3-4 days refrigerated, and the dressing keeps fresh in an airtight container for up to 5 days in the refrigerator. You can use rotisserie chicken as a time-saving alternative to grilling your own.
