  • 1/4 cup olive oil or melted coconut oil
  • 2 large eggs at room temperature
  • 1 tsp vanilla extract

  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup raisins or cranberries
  • 1 medium apple peeled and diced (for extra texture)

Instructions
 

  • Preheat your oven to 350°F (175°C). Line an 8x8-inch square baking pan with parchment paper, leaving some overhang for easy removal, or lightly grease with oil.
  • In a medium bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  • In a large bowl, whisk together the applesauce, maple syrup or honey, oil, eggs, and vanilla extract until smooth and well incorporated.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Avoid over-mixing (aim for about 12-15 strokes).
  • If using any of the optional add-ins like nuts, dried fruits, or fresh apple pieces, fold them in gently now.
  • Pour the batter into your prepared baking pan, spreading it evenly. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean with just a few moist crumbs.
  • Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
