Ingredients
  

Date Caramel

  • 1 cup Medjool dates pitted, soft (about 200g)
  • 2 tbsp almond butter creamy (or cashew/peanut butter)
  • 3-4 tbsp warm water
  • 1 tsp pure vanilla extract
  • 1/4 tsp sea salt
  • 1/4 tsp cinnamon optional

Apple Slices

  • 3-4 crisp apples Honeycrisp, Granny Smith, or Pink Lady
  • 2 tbsp lemon juice
  • 1 cup water for lemon water bath

Optional Toppings

  • 1/4 cup chopped nuts walnuts, pecans, or almonds
  • 2 tbsp mini chocolate chips dairy-free if needed
  • 2 tbsp unsweetened coconut flakes
  • 1 tbsp hemp seeds for added protein

Instructions
 

  • If your dates aren't soft and pliable, place them in a bowl with warm water for 10 minutes to soften. Once softened, drain thoroughly and pat dry with a paper towel.
  • Add the pitted dates, almond butter, vanilla extract, and salt to a food processor. Pulse a few times to break down the dates, then process continuously while slowly adding warm water one tablespoon at a time until you achieve a smooth, spreadable consistency.
  • Core the apples and slice them into ¼-inch wedges. Immediately place the slices in the lemon water mixture for 30 seconds, then pat dry.
  • Arrange the apple slices on a serving platter in a fan pattern or circle. Spoon the date caramel into a small bowl in the center, or drizzle it directly over the apple slices.
  • Sprinkle your chosen toppings over the caramel-dipped apple slices for added texture and nutrition.

Notes

- Date caramel stores in an airtight container in the refrigerator for up to a week. Bring to room temperature before serving.
