Ingredients
  

  • 2 cups cottage cheese 4% milkfat recommended for creaminess
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic minced
  • 1 tablespoon fresh chives finely chopped
  • 1 tablespoon fresh dill finely chopped
  • 1 tablespoon fresh parsley finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons Greek yogurt optional, for extra creaminess

Instructions
 

  • Drain excess liquid from the cottage cheese by placing it in a fine-mesh strainer for about 5 minutes. Press gently with a spoon to release more moisture.
  • Transfer the drained cottage cheese to a food processor or high-powered blender. Add olive oil, minced garlic, lemon juice, salt, and pepper.
  • Pulse the mixture several times, then process continuously for 60-90 seconds until completely smooth. Stop to scrape down the sides as needed.
  • Add all chopped fresh herbs and lemon zest to the processor. Pulse 5-6 times just until the herbs are incorporated but still visible throughout the dip.
  • Taste and adjust seasonings if needed - add more salt, lemon juice, or herbs according to your preference.
  • Transfer the dip to a serving bowl, cover, and refrigerate for at least 30 minutes to allow flavors to meld. Before serving, drizzle with a touch more olive oil and garnish with additional fresh herbs.

Notes

For a dairy-free version, substitute silken tofu for cottage cheese (texture will differ slightly).
Ricotta cheese can replace cottage cheese for a smoother base.
If using dried herbs instead of fresh, use 1 teaspoon dried herbs for each tablespoon of fresh.
For meal prep, prepare the base without herbs and add fresh herbs the day of serving.
Store with a thin layer of olive oil on top to preserve freshness and prevent discoloration.
