Equipment

  • Baking Dish
  • Meat thermometer
  • Mixing Bowl

Ingredients

Chicken and Marinade

  • 4 boneless, skinless chicken breasts about 6-8 oz each
  • 1/3 cup honey locally sourced preferred
  • 1/4 cup Dijon mustard
  • 2 tbsp whole grain mustard
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tbsp fresh lemon juice
  • 1 tsp dried thyme or 1 tbsp fresh
  • 1/2 tsp paprika
  • salt and freshly ground pepper to taste

Instructions

  • In a medium bowl, whisk together honey, both mustards, olive oil, minced garlic, lemon juice, thyme, paprika, salt, and pepper until fully combined. The mixture should have a smooth consistency with small mustard seed specks visible.
  • Pat the chicken breasts dry with paper towels. For even cooking, pound thicker portions gently with a meat mallet until the breasts have uniform thickness (about 3/4 inch).
  • Place chicken breasts in a shallow dish or zip-top bag. Pour 3/4 of the honey mustard mixture over the chicken, reserving the remainder for basting. Turn the chicken to coat thoroughly. Cover or seal and refrigerate for at least 30 minutes, though overnight marination yields the most tender, flavorful results.
  • Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease with cooking spray to prevent sticking. Remove chicken from refrigerator 15 minutes before baking.
  • Arrange marinated chicken breasts in the prepared baking dish, leaving space between each piece. Brush with half of the reserved marinade. Bake for 15 minutes, then brush with remaining marinade and continue baking for 10-15 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  • Let the chicken rest for 5-10 minutes before slicing to retain maximum juiciness. Serve warm with your favorite sides.

Notes

For extra flavor, add 1 tablespoon of apple cider vinegar to the marinade.
To make meal prep easier, you can prepare and marinate the chicken up to 24 hours in advance.
This chicken works wonderfully sliced in wraps, salads, or grain bowls throughout the week.
