Ingredients
  

Coffee Base

  • 1 shot espresso or ½ cup strong brewed coffee, cooled

Pumpkin Mixture

  • 3/4 cup unsweetened almond milk or your preferred milk alternative
  • 2 tablespoons pumpkin puree not pumpkin pie filling
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • 1-2 teaspoons maple syrup or honey adjust to taste

For Serving

  • ice cubes
  • light whipped cream or coconut whip optional, for topping
  • cinnamon stick or sprinkle of cinnamon optional, for garnish

Instructions
 

  • Brew your espresso or strong coffee and allow it to cool to room temperature. For a quicker option, brew your coffee and pour it over ice immediately to flash-cool it.
  • In a small saucepan over low heat, whisk together the pumpkin puree, pumpkin pie spice, and your chosen sweetener. Heat for just 1-2 minutes to help the spices bloom. Remove from heat and stir in the vanilla extract.
  • Transfer your pumpkin mixture to a blender. Add the milk and pulse for 15-20 seconds until frothy and well combined.
  • Fill a tall glass with ice cubes. Pour your cooled espresso or coffee over the ice, then slowly add the pumpkin-milk mixture. For professional-looking layers, try pouring over the back of a spoon.
  • Top with a light swirl of whipped cream if desired, and dust with an extra sprinkle of cinnamon or pumpkin pie spice. Add a cinnamon stick for an aromatic garnish that doubles as a stirrer. Serve immediately.

Notes

Feel free to make this hot instead of iced by heating your milk and pumpkin mixture until steaming (not boiling), blending until frothy, and pouring over hot coffee instead of ice.
For homemade pumpkin pie spice, mix 4 parts ground cinnamon, 2 parts ground ginger, 1 part ground nutmeg, and 1 part ground cloves.
Prepare the pumpkin-spice milk mixture up to 3 days ahead and store in an airtight container for quick assembly.
