Ingredients
  

  • 4 pounds apples about 12 medium apples (Fuji, Gala, or Honeycrisp recommended)
  • 1/3 cup apple cider or water
  • 1/4 cup maple syrup or honey
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 tablespoon fresh lemon juice

Instructions
 

  • Wash, peel, core, and roughly chop your apples into 1-inch chunks. Don't worry about making them too uniform since they'll break down during cooking.
  • Place chopped apples in your Instant Pot and add apple cider or water, maple syrup, cinnamon, nutmeg, cloves, and salt. Stir gently to combine.
  • Secure the Instant Pot lid, ensuring the valve is set to "sealing." Select the Manual/Pressure Cook function and set for 20 minutes on high pressure.
  • Once cooking completes, allow a natural pressure release for 7 minutes, then carefully perform a quick release for any remaining pressure.
  • Add vanilla extract and lemon juice to the cooked apple mixture. Using an immersion blender, carefully blend the mixture until it reaches your desired consistency.
  • If your apple butter seems too thin, select the Sauté function and cook for an additional 5-10 minutes with the lid off, stirring frequently to prevent splatter and sticking.
  • Allow to cool before transferring to storage containers. The apple butter will continue to thicken as it cools.

Notes

- For a sugar-free version, replace maple syrup with 1/4 cup of monk fruit sweetener
- The flavor improves after 24-48 hours of refrigeration as the spices meld
- Mix 2-3 apple varieties for more complex flavors
- Store in airtight containers in the refrigerator for up to 3 weeks
- Can be frozen for up to 6 months
- For long-term storage, process in a water bath canner for 10 minutes in sterilized half-pint jars
