Ingredients
  

Potato Base

  • 2 pounds russet potatoes about 4-5 medium potatoes, scrubbed clean
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Filling

  • 4 tablespoons unsalted butter softened
  • 1/4 cup sour cream substitute Greek yogurt for a lighter option
  • 1/3 cup Irish cheddar cheese shredded (substitute any sharp cheddar)
  • 2 green onions finely chopped
  • 3 strips bacon cooked and crumbled (omit for vegetarian version)
  • 1 tablespoon fresh chives minced

Garnish

  • 2 tablespoons additional sour cream
  • extra chives and green onions
  • paprika for dusting

Instructions
 

  • Preheat your oven to 400°F (200°C). Scrub the potatoes thoroughly and pat dry with paper towels. Prick each potato several times with a fork to allow steam to escape during baking.
  • Rub the potatoes lightly with olive oil and sprinkle with a pinch of salt.
  • Place the prepared potatoes directly on the middle oven rack (place a baking sheet on the lower rack to catch any drippings). Bake for 45-50 minutes until the skin is crisp and the insides are tender when pierced with a knife.
  • Allow the potatoes to cool until they can be handled comfortably, about 10 minutes.
  • Cut each potato in half lengthwise, then carefully scoop out the insides, leaving about 1/4-inch of potato attached to the skin. Transfer the scooped potato to a mixing bowl. Place the hollowed skins on a baking sheet.
  • Add the softened butter to the still-warm potato and mash until smooth. Fold in the sour cream, Irish cheddar, half of the green onions, and crumbled bacon. Season with salt, pepper, and garlic powder to taste.
  • Spoon or pipe the filling back into the potato skins, mounding slightly.
  • Return to the oven and bake for an additional 15 minutes until the tops are golden and cheese is bubbly. For an extra golden finish, broil for the final 2 minutes, watching carefully to prevent burning.
  • Top each Irish Potato Bite with a small dollop of sour cream, remaining green onions, chives, and a light dusting of paprika. Serve immediately while hot.

Notes

For a more authentic Irish flavor, try incorporating a splash of Irish whiskey to the filling mixture or use Kerrygold butter for its rich, creamy texture.
For extra crispy skins, let the potatoes sit in salt for 10 minutes before baking, then rinse and dry thoroughly.
Make-ahead option: Prepare the filled potato skins up to 24 hours in advance, cover, refrigerate, and bake just before serving (add 5-7 minutes to the final baking time).
Freezer-friendly: Freeze the assembled but unbaked Irish Potato Bites for up to 1 month. Thaw overnight in the refrigerator before baking.
