Equipment

  • Baking Sheet
  • Parchment Paper or Aluminum Foil
  • Wire Rack (optional)
  • Toothpicks
  • Food-safe Gloves (recommended)

Ingredients

For the Filling

  • 8 oz cream cheese softened to room temperature (substitute: Greek yogurt cream cheese for a lighter option)
  • 1 cup sharp cheddar cheese shredded (substitute: pepper jack for extra heat)
  • 2 cloves garlic minced
  • 1/4 cup green onions finely chopped
  • 1/2 tsp smoked paprika
  • 1/4 tsp ground black pepper
  • 1/8 tsp salt adjust to taste

For Assembly

  • 12-15 jalapeños medium-sized
  • 1 lb bacon thin-cut (substitute: turkey bacon for a leaner option)
  • 2 tbsp honey for drizzling (optional)
  • 1/4 cup fresh cilantro chopped, for garnish (optional)

Instructions

  • Preheat your oven to 400°F (205°C) and line a large baking sheet with parchment paper or aluminum foil. For easy cleanup, consider using a baking sheet with a wire rack to allow excess bacon grease to drip away from the poppers.
  • Cut each jalapeño in half lengthwise and use a spoon to carefully remove the seeds and membranes. Leave the stems intact for an elegant presentation and convenient handling. Pro tip: Wear food-safe gloves during this step to protect your hands from capsaicin burns.
  • In a medium bowl, combine the softened cream cheese, shredded cheddar, minced garlic, chopped green onions, smoked paprika, black pepper, and salt. Mix thoroughly until all ingredients are well incorporated and the mixture is smooth.
  • Spoon or pipe the cheese mixture into each jalapeño half, filling them just to the top without overflowing.
  • Cut bacon slices in half crosswise (or into thirds for smaller jalapeños). Carefully wrap each filled jalapeño half with a piece of bacon, starting at one end and slightly overlapping as you wrap. Secure with a toothpick if necessary. Place the bacon seam-side down on the baking sheet to prevent unraveling during cooking.
  • Bake in the preheated oven for 15-20 minutes, or until the bacon is crispy and the cheese filling is bubbly and lightly browned. For extra crispiness, broil for the final 1-2 minutes, but watch closely to prevent burning.
  • Let the jalapeño popper bites cool for 5 minutes before serving. If desired, drizzle lightly with honey and sprinkle with fresh cilantro for a gourmet finish that balances the heat with a touch of sweetness.

Notes

Make-Ahead Options:
  • Prepare and fill jalapeños up to 24 hours in advance, storing tightly covered in the refrigerator.
  • Wait to wrap with bacon until just before baking for best results.
Leftover Storage:
  • Refrigerate leftovers in an airtight container for up to 3 days.
  • Reheat in a 350°F oven for 8-10 minutes until warmed through and bacon re-crisps.
For Milder Poppers: Soak the hollowed jalapeños in ice water for 30 minutes before filling to reduce the heat significantly.
Air Fryer Option: Air fry at 375°F for approximately 10-12 minutes for extra-crispy bacon.
